North Coast Salad

Ingredients

 50g tuna fish

75g pasta shells/macaroni

25g cheese

1 piece of red and green pepper

1 tablespoon sweet corn

1 stick of celery

half a carton of natural yoghurt

1 tablespoon mayonnaise or salad cream

1x 5ml spoon lemon juice.

Method

Half fill a large pan with cold water, bring to the boil. Add pasta and boil for 10-12 minutes.

Drain well and leave to cool.

Put the salad cream, lemon juice and yoghurt into a small bowl mix well. This is the salad dressing.

Flake the tuna fish.

Wash de-seed slice and dice the peppers. Slice the celery. Measure the sweet corn. Stir all the vegetables, tuna and cheese into the dressing.

Finally stir in the drained cooled pasta and mix well. Serve.
