Pineapple and Sultana Buns

 

Ingredients

 

 

150g SR flour

Pinch baking powder

75g margarine

75g caster sugar

3 small pineapple rings

50g sultanas

Pinch mixed spice

1 egg

a little pineapple juice if necessary

 

Oven temperature 190o C   Gas mark  5 for 15-20 minutes

 

 

Method

 

1.      Sieve the flour and spice into a large bowl.

2.      Rub the margarine into the flour until it looks like breadcrumbs.

3.      Chop the pineapples into chunks.

4.      Add sugar and chopped pineapple to the margarine and flour mixture.

5.      Stir in the sultanas.

6.      Beat the egg and add to the mixture. Add pineapple juice if necessary.

7.      Divide into 8 even sized portions and spoon into rough heaps onto a greased baking sheet.

8.      Bake till well risen springy to touch and golden brown.
