Ingredients Oil Brown Sugar Chicken (chopped and seasoned) Onion (chopped) Garlic (chopped) Sweet Pepper Worcestershire Sauce Carrot (chopped) Celery (chopped) Pigeon Peas or … Black-Eye Peas or … Kidney Beans Rice (Approx. 1¾ cups) |
Method In a large heavy bottomed pan add oil, (enough to cover bottom). Add brown sugar about two tablespoons.
Heat oven medium high heat till sugar is bubbling and dark brown.
Add chicken, onion, garlic, sweet pepper, worcestershire sauce. Stir quickly to prevent sticking. When chicken is well-browned, add carrot, celery or any other vegetables that may be hanging around the house. Add pigeon peas or black-eye peas or kidney beans (1 tin depending on how much chicken).
Stir everything well.
Add rice (1¾ cups or more depending on how many people are eating). Stir well, add enough water to cover (better too little water than too much) you can always add more if necessary, but not too much water. Add salt, black pepper and either hot sauce or a whole pepper to float on top (do not allow pepper to burst or you will be in trouble!).
Cook until rice is cooked through and water has evaporated. If bottom burns a little, do not panic its called "bun-bun" and it tastes good!
