MINESTRONE SOUP

 

Ingredients

 

1 rasher bacon

1/2 carrot

1/2 potato

1 small onion

300ml beef or ham stock

25g peas

25g pasta

2x15ml tomato puree

mixed herbs

 

Method

 

1  Collect ingredients

2  Wash and peel carrot and potato.  Grate

3  Peel and chop onion

4  Snip bacon into small pieces fry gently in a large pan for 2-   3min.

5  Add carrot, potato and onion to the saucepan.

6  Add tomato puree and beef stock.  Cover and simmer for 20min.

7  Add peas and pasta and cook for a further 10min.

8  Serve.
