LENTIL SOUP

    

     INGREDIENTS

     500mls boiling water

     half ham stock cube

     40gms pre-soaked lentils

     pinch of salt and pepper

     half a potato

     half an onion

     1 small carrot

     sprig of parsley (chopped)

     1 slice of wholemeal bread

    

    

     METHOD

     1. Dissolve stock cube in boiling water. Pour stock into a large pan.

     2. Add lentils, seasoning and simmer gently.

     3. Wash, peel slice and dice potato. Add to pan.

     4. Peel and chop onion finely. Add to pan.

     5. Wash, peel and grate carrot. Add to pan.

     6. Simmer for 20-25mins. with lid on. Stir occasionally.

     7. Taste soup season if necessary. Chop parsley finely,and sprinkle onto soup.

     8. Toast bread on both sides under grill. Cut into small squares to form croutons.

     9. Serve soup hot - garnished with parsley and croutons.
