- 1 onion
- 200g minced beef
- 15gm spoon curry powder
- 15gm spoon flour
- 15gm spoon coconut
- 15gm spoon sultanas
- 1 small carrot ( diced )
- 125mls beef stock
- 1x 5ml spoon lemon juice
- seasoning to taste
- parsley to garnish
- 200gm long grain rice

- Method
Peel and chop onion finely.
Brown mince thoroughly in a stewpan.
Add onion continue to cook until the onion is soft.
Stir in curry powder, flour, coconut and sultanas.
Cook for 1-2 minutes.
Gradually stir in stock and lemon juice bring mixture to the boil. Reduce the heat and simmer gently for at least 30 mins.
Half fill a large pan with cold water and bring to the boil.
Wash rice thoroughly in a sieve under cold running water until water is clear.
Add washed rice to boiling water and cook until the rice is tender (approx. 12 mins.)
Taste curry and season if necessary.
Serve and garnish with chopped parsley.
