Ingredients 100g minced beef half onion 3x 15ml tinned tomatoes 75ml beef stock 1tsp chilli powder 2x 15ml spoons kidney beans 1x 10ml spoon tomato puree mixed herbs 2x 15ml spoons diced frozen carrots 75g long grain rice |
Method Chop the onion, brown the mince with the onion. Stir in the chilli powder herbs tomato puree tinned tomatoes and beef stock. Simmer for 20 minutes. Half fill a large pan with water bring to the boil add rice and boil for 15 minutes. Drain through a sieve and serve. Stir carrots and kidney beans into mix and continue to simmer for a further 15 minutes. Serve with a neat border of rice round the edge. Chilli con carne can also be served with pitta bread, crusty bread, salad or baked potato. |
