CHEESY PASTA 

                                 

                  

    INGREDIENTS

    75g wholemeal pasta twists / shells

    25g margarine

    25g flour

    250mls low fat milk

    pinch of salt, pepper and mustard

    50g cheese

   

 

    METHOD

 

  1. Half fill a large pan with cold water and bring to the boil. Reduce heat and add pasta.  Simmer with lid off for 10-12mins, stir after 2-3mins.

 

  1. To make sauce  Melt margarine in a pan over a low heat. Add flour and mix well with a wooden spoon. Cook on a low heat for one minute. REMOVE pan from heat.  Slowly add milk to pan, beating mixture well after each addition of milk.  When all the milk has been added return pan to heat and bring to the boil STIRRING ALL THE TIME. Add seasoning. Stir in 2/3rd of grated cheese.

 

  1. Drain pasta through a sieve and mix with cheese sauce.

 

  1. Pour into casserole dish sprinkle on remaining cheese and brown under grill.

 

  1. Garnish with parsley
