Banana Cake

Ingredients

4 ozs S R wholemeal flour

2 ozs soft marg.

1 egg

1 banana

1 oz. caster sugar

a drop vanilla essence

Method

Sieve flour into a large bowl.

Add margarine, beaten egg, mashed banana sugar and vanilla essence.

Beat well until mixture is soft and smooth.

Pour into prepared loaf tin. Bake at 1800C for approx. 30mins turn down to 160C for remainder of cooking time. Loaf should be golden brown and springy to touch. (approx. 15 mins.)

Turn out and cool well on a wire cooling tray.
