Apple Muffins

 

Ingredients

 

50g margarine

50g caster sugar (1 rounded table spoon)

1 teaspoon baking powder

½ level teaspoon cinnamon

½ level teaspoon nutmeg

50g S.R. flour (2 rounded table spoons)

50g whole-wheat flour (2 rounded table spoons)

1-2 tablespoons milk

1 egg

½ cooking apple

 

Topping

 

15g demerara sugar

¼ teaspoon mixed spice

 

Method

 

  1. Collect ingredients. switch on oven. Place 8 paper cases on baking tray.
  2. Wash apple
  3. Cream margarine and sugar until light and fluffy
  4. Beat egg and add a little at a time, beating well after each addition
  5. Fold in flours, baking powder and spices.  Prepare apple and grate into mixture.  Stir well adding enough milk to give a soft consistency.
  6. Divide mixture equally between paper cases
  7. Sprinkle each with demerara sugar and mixed spice
  8. Bake for 15 mins. until well-risen, golden brown and firm to touch
  9. Remove from tin and cool on a wire tray
