Apple Muffins
Ingredients
50g margarine
50g caster sugar (1 rounded table spoon)
1 teaspoon baking powder
½ level teaspoon cinnamon
½ level teaspoon nutmeg
50g S.R. flour (2 rounded table spoons)
50g whole-wheat flour (2 rounded table spoons)
1-2 tablespoons milk
1 egg
½ cooking apple
Topping
15g demerara sugar
¼ teaspoon mixed spice
Method
- Collect
ingredients. switch on oven. Place 8 paper cases on baking tray.
- Wash
apple
- Cream
margarine and sugar until light and fluffy
- Beat
egg and add a little at a time, beating well after each addition
- Fold
in flours, baking powder and spices.
Prepare apple and grate into mixture. Stir well adding enough milk to give a soft consistency.
- Divide
mixture equally between paper cases
- Sprinkle
each with demerara sugar and mixed spice
- Bake
for 15 mins. until well-risen, golden brown and firm to touch
- Remove
from tin and cool on a wire tray
